Lecithin is a Greek word meaning egg yolk. The reason for its name is the presence of a large amount of lecithin in the egg yolk and the discovery of this substance for the first time in the egg yolk. Lecithin is a soy protein. This substance is obtained from the extraction and purification of crude soybean oil phosphatides, then it is converted into a special carbohydrate and is like thin honey.
Lecithin plays an important role in strengthening memory and fighting forgetfulness. Due to the increase in forgetfulness and Alzheimer’s disease in the elderly and the less use of this group of their brains, it is necessary to consume more of these substances. Currently, in European countries, elderly and middle-aged people consume lecithin in the form of food supplements that are available in global markets, and consumption of soybeans is recommended as the main source of lecithin.
